Raicilla Originated in Jalisco

Raicilla is a distilled spirit made from the agave plant that is produced in Jalisco, Mexico. Similar to tequila and mezcal, raicilla is a traditional beverage that has been produced for more than 300 years. Raicilla is a 100% agave distillate made in an artisan way and there are two types, Coastal and Highlander. Raicilla is considered an artisan product due to the way it is produced.  Also, varieties include young White or Silver, rested or aged, and flavored or traditional. Raicilla is a quality artisanal, ancestral and wild product you must try on your next vacation to Mexico. In addition to Puerto Vallarta, raicilla is also produced in Mascota, San Sebastián del Oeste, Mixtlán, Talpa de Allende, Cabo Corrientes, Chiquilistlán and other small towns in the region. Mascota actually even hosts an annual raicilla festival each year, too.

Mexico’s Rich Heritage

Mexico is regarded as a country with a rich heritage and interesting culture. It has a strong tradition of producing traditional drinks such as tequila mezcal and raicilla. In addition, raicilla has recently been protected by a Denomination of Origin. The fermented mash of the central stem (piña) of the maguey plant is distilled using a crude, primitive elaboration process. This technique allows the raicilla flavors to shine. The type of soil, topography, climate, water, producer (“Maestro Raicillero”), alcoholic graduation, yeasts, and other factors also influence its flavor. The finished product is a liquid that is colorless when it matures in glass, or yellowish when it matures in a wooden container. For raicilla, two species are used of the lechuguilla agaves, specifically “pata de mula” (mule foot), or “agaves raicilleros” of the species (Agave inaequidens) and (Agave maximiliana).
